Guess Who’s Coming To Dinner: Special Guest Chef Salvatore Denaro at Porsena

In Food on March 28, 2011 at 9:52 pm

I had the pleasure of dining at Porsena last night for what turned out to be an unbelivabley delicious tasting. Salvatore Denaro has had a big impact on Sara Jenkins and in her own words,” he is my biggest inspiration, for the pure honesty of his food“.

Salvatore keeps to Italian tradition when creating his modern dishes. He uses ingredients, as simple as eggplant and ricotta, to turn a dish into a masterpiece. Although I didn’t get a chance to speak to him, I could see how vibrant his personality was and it certainly came out in his food.

Here is a glimpse of what I feasted on …

Crostino con salsiccia cruda e stracchino: fresh homemade sausage, stracchino cheese, bread

Baccala mantecato: warm olive oil whipped salt cod

Lenticchie: umbrian lentil salad

Anneloni alla norcina: fat rings, pork, sweet onion, fresh ricotta

Pasta alla norma: fried eggplant, tomato sauce, ricotta salate, basil

Piatto del norcino: housemade pork sausage, fegatelli (pork liver), niman ranch pork chop, cannellini beans
